Ingredients
- 1 1/3 cups cornmeal
- 2 2/3 cups gluten-free flour
- 2 cups sugar
- 2 tablespoons baking powder
- 1 tablespoon smoked salt (or regular salt if preferred)
- 8 eggs
- 2 1/2 cups neutral oil (such as canola or vegetable)
- 2 cups milk
- 1 cup buttermilk
Instructions
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder and salt. In a separate bowl, beat together eggs, oil, milk and buttermilk until smooth.
- Add the wet mixture to the dry ingredients and stir until fully combined. Pour into a greased 9-by-13-inch baking dish.
- Bake at 350 F for about 35–40 minutes, or until set and a toothpick inserted in the center comes out clean.
