The Blue Collar Restaurant Group will be back this week after a short break, offering take out and delivery at all of their restaurants starting on Wednesday, April 22. Until then, you can try some of our favorite recipes that they have shared with us at home.
Bubba’s
Imagine the sweet, soft flavors of buttermilk, in a pie. Bubba’s BBQ does it, and now you can at home with their recipe. Dessert lovers, rejoice, add this pie to your repertoire.
Bubba’s Buttermilk Pie
Ingredients
- 7 eggs
- 1 1/2 teaspoon vanilla
- 1/2 teaspoon salt
- 3 1/2 cups sugar
- 3/4 cups flour
- 2/3 cups margarine, melted
- 1 cup buttermilk
Instructions
- Whisk together the eggs, vanilla and salt.
- Add sugar, flour, margarine and buttermilk, and whisk again to combine.
- Pour in pie shells.
- Bake at 300 F for 45 minutes to 1 hour, or until you can insert a knife and it comes out clean.
- Makes 2 pies.

Blue Collar’s BBQ Sauce
Ingredients
- 1 quart ketchup
- 1 1/3 cup apple cider vinegar
- 1/2 cup plus 2 tablespoons brown sugar
- 1/4 cup honey
- 1/4 cup Worcestershire
- 1 1/2 tablespoons smoked paprika
- 1 1/4 tablespoons dry mustard
- 2 teaspoons garlic powder
- 2 teaspoons kosher salt
- 2 teaspoons black pepper
- 1 teaspoon liquid smoke
- 1/4 cup plus 2 tablespoons whiskey
Instructions
- Combine all ingredients in sauce pot and bring to boil over medium heat.
- Reduce heat to low and simmer for 10 minutes.
- Cool.
- Store in a refrigerator.

Merry Piglets’ Salsa Verde
Ingredients
- 1 16-ounce can whole tomatillos
- 1 16-ounce can whole jalapenos
- 8 garlic cloves
- 3 cups mayonnaise
- 3 cups sour cream
- 1 cup chopped cilantro
Instructions
- Add all ingredients to a blender and puree until smooth.
Noodle Kitchen
At home, you can add some Noodle Kitchen flare with the recipe for their edamame. This tasty snack is a crowd pleaser, and can be easily made in large quantities to serve a hungry crowd.
Noodle Kitchen’s Edamame
Ingredients
- 1/3 cup dry sake
- 1/3 cup white wine
- 3 1/3 cups low sodium soy sauce
- 1 cup sugar
- 1 pound fresh or frozen edamame, in the pod
- White and black sesame seeds for garnish
Instructions
- Cook sake and wine in a saucepan at a slow boil over medium heat until it has reduced by a third.
- Add soy sauce and again boil until reduced down by a third.
- Add sugar.
- Remove from heat and stir.
- Boil the edamame pods in salted water until tender, about 8 minutes.
- Drain in a colander and pat dry.
- Toss in enough sauce to generously coat edamame and serve warm.
- Sprinkle with sesame seeds.

Sidewinders Alfredo
Ingredients
- 1/2 gallon heavy cream
- 5 egg yolks
- 1 1/2 cups Parmesan cheese
- 1/2 pound butter, melted
- 1 1/2 tablespoons black pepper
- 1 1/2 tablespoons salt
- 1/4 cup roasted garlic
Instructions
- Blend together all ingredients.
- Coat your favorite pasta noodles with sauce and serve warm.
