Inspired by not wanting to heat up my house on a hot afternoon, I set out to “cook” a meal that would highlight my weekly farmers market finds. I put together a sandwich that will rival anything you could buy, and was 100-percent sourced at the Jackson Hole Farmers Market.
The No-Cook Meal: Pesto, veggie and cheese bagel with candied jalapeño cipe

Ingredients
- Elysian Bakery’s everything bagel
- Chasing Paradise’s pesto
- Canewater Farm’s lettuce (they make it even easier and wash it for you!)
- Canewater Farm’s cucumbers, sliced thinly lengthwise
- Dinner’s Ready’s Cowboy Candy (sweet and spicy jalapeños)
- Lark’s Meadow cheese (any will work, the smoked Swiss is my favorite)
Instructions
- Cut and slice bagel in half, then lightly toast. Add a generous smear of pesto to both sides of the bagel. Starting with lettuce, add toppings to the sandwich. Top with remaining half of bagel and serve.
- * Portions are to-taste and also depend on how many sandwiches you are making. Veggies can be adjusted to sandwich-makers taste (fresh radish, shaved carrots would be nice additions).
