It would seem the first rainy days of mud season are upon us, and they’re brining a wet chill that seeps into your bones. Warm up inside and fuel up for the day ahead (or the World Championship Snowmobile Hill Climb this weekend) with delicious homemade pancakes. Amp up your breakfast game with the Westbank Grill’s ricotta pancakes recipe. These additional ingredients add a unique lusciousness to ordinary pancakes. You and yours won’t be able to tell that the final product came from a box of mix, they’re that good!
Ingredients
- 2 cups standard pancake mix (found at any grocery store; for a healthier alternative, use whole wheat mix)
- 1/2 cup water
- 1 egg
- 1/4 lemon, zested
- 3 tablespoons ricotta cheese
Instructions
- Mix all ingredients in a bowl. Ladle 1 ounce of batter into a greased, warm cast-iron skillet.
- Allow cakes to cook until you see bubbles, then flip.
- Cook until both sides are golden brown.
