Ingredients
- 1 cup stout beer
- 2 cups heavy whipping cream
- 1 tablespoon vanilla paste
- 1 cup dark chocolate chips
- 1/2 cup corn syrup (optional for a creamier texture)
- 8 large egg yolks
- 1 cup brown sugar
- *Special equipment needed: ice cream maker/machine
Instructions
- Add the beer to a medium stockpot over medium heat and simmer for 8 minutes. Continue to simmer and add the cream, vanilla, chocolate chips, and corn syrup, mixing until the chocolate is fully combined. Heat to 110 F.
- In a large mixing bowl, combine egg yolks and brown sugar. Whisk until the sugar is fully combined.
- Temper the eggs by taking 2-ounce ladles of the warm cream mixture and slowly adding it to the eggs while whisking until half of the cream is used. Then add the tempered egg mixture to the remaining cream and heat to 180 F while continually stirring. Pass your mixture through a fine mesh strainer and cool till 39 F. Once cooled, follow the steps on your ice cream machine and enjoy!
