From the welcome shot of tequila to get you going, to the presentation of the Walking Taco (served in a bag of Fritos), it is hard to pick a favorite thing about CASA. But sometimes a salad, that is anything but simple, really hits the spot.
CASA’s version of a chopped salad comes with crispy chickpeas, fresh veggies and a simply delicious avocado ranch dressing. We asked and the summer pop-up restaurant at Caldera House shared the recipe with us. Enjoy at home or try it out Wednesday through Sunday, 11 a.m. to 9 p.m. through October 9.
Ingredients
- 8 ounces fresh avocado
- 16 ounces house-made ranch dressing
- 1/4 cup fresh lime juice
- 4 tablespoons Tabasco
- salt and pepper to taste
Instructions
- Blend all ingredients together and chill overnight.
