It has been far too many weeks and months that the crown jewel of Jackson’s brunch scene has been out of commission. Since July 2, when a fire scorched the historic cabin structure, Cafe Genevieve has been closed for construction. Curious minds, and anxious taste buds, want to know: when will it be back?
Fortune teller says: March. Hopefully. Pending that construction stays on schedule, Cafe Genevieve anticipates reopening in March. Due to the smoke damage, the restaurant has undergone some dining room updates, while also taking this time to expand its kitchen and deck.
When it returns, diners can expect their favorite brunch, lunch and dinner favorites, with some reworked items in the mix. This year, Cafe Genevieve will actually celebrate ten years of operation, and will honor this anniversary with the return of some of its first menu favorites.
In the meantime, get your Cafe Genevieve fix with the recipe for its mac and cheese. A tried and true favorite, we hope this dish can tide you over until the real thing returns to Broadway.
Ingredients
- 3 large egg whites
- 3/4 cup baking sugar
- 1/2 cup butter, melted
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 3 tablespoons water
- 1 cup all-purpose flour
- all natural red food coloring
Other materials:
- Muffin tin for shaping the cookie
- Small paper fortunes (cut out and ready to go)
Instructions
- Preheat the oven to 375 F.
- Line a sheet pan with parchment paper or a silicone mat, and have your paper fortunes ready to go.
- In a stand mixer (or large bowl with a hand mixer), whip the egg whites and sugar on high speed for about 2 minutes, until frothy.
- Whip in the melted butter, vanilla, almond extract and water until incorporated.
- Add the flour and mix until the flour disappears.
- Mix in 4-5 drops of the food color and blend until you get the desired color consistency.
- With a tablespoon, spoon the batter onto the parchment paper and spread it out into an even 4-inch circle with the back of the spoon. *I suggest not doing any more than 3-4 at a time, since they set very quickly.
- Bake the cookies for about 8-10 minutes, until the edges are slightly brown. *If you let them brown too much, they will snap when you shape them.
- When the fortune cookies finish baking, remove them from the oven and quickly flip the circle over, fold into a semi-circle and crimp the top, slide the paper fortune in and finishing the crimping.
- Quickly fold the base of the cookie over a cup to make the shape and let cool in the muffin tin.
- Repeat with the remaining batter.
