Trio’s olive oil cake is the perfect ending to a meal. It is light and flavorful at the same time and I would love to try to make the recipe at home.

Ingredients
- 2 eggs
- 1 teaspoon vanilla extract
- 3/4 cup buttermilk
- 1 1/3 cups olive oil
- Zest of 4 oranges
- 1 1/2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 3/4 cups cake flour
- Whipped cream and fresh berries, for serving
Instructions
- Combine the first 5 ingredients into one bowl and mix well. Combine the rest of the ingredients except the flour in another bowl and mix well. Add the dry mixture to the wet mixture, then add flour and whisk enough to combine but not over mix. Pour into a greased 9-inch cake pan and bake at 350 F for 30 minutes. Cool and serve with whipped cream and berries.
