Haydens Post Gets New Chef

The southern-Cal influence of Rachel Jacobs shines through with bright, fresh meals at Haydens Post.

With the large, sunny deck facing Snow King Mountain, Snow King Resort offers sweeping views of the town hill. Tons of outdoor space provides plenty of social distance dining and Haydens Post is currently open for breakfast, lunch and dinner.

A new chef is behind the fresh, seasonal, and more local-centric food being served right now. A recent transplanted from southern California, Rachel Jacobs brings a lively approach to the restaurant. As a vegan, Jacobs is constantly looking to approach food in a sustainable, light way.

While she stays away from meat and dairy herself, diners will still primarily find traditional food on her menus (think sandwiches, salads and wraps at lunch). She grew up on a diet of meat and potatoes, she noted, so is comfortable in that realm. Diners will be delighted, though, with the vegetarian/vegan options on the menu, too. The chickpea salad sandwich with vegan cheese on the lunch menu has been a big hit this season.

Jacobs landed in Jackson when her plans to hike the Pacific Crest Trail this summer fell through due to COVID-19. Her love of hiking and outdoor activity should make the community a good fit when she has time to explore.
