Ingredients
- 2 avocados
- 3 tablespoons chia seeds, ground in coffee grinder
- 6 dates
- 4 tablespoons maple syrup
- 3/4 cup raw cacao powder
- 1 3/4 cup coconut milk (see note on how to make at home or use canned full-fat coconut milk)
Instructions
- To make the pudding, combine all ingredients in a high-powered blender and blend until smooth.
- To make your own coconut milk, combine 2 cups dry, shredded coconut and 4 cups water in a high-powered blender.
- Blend on high speed for 30 seconds.
- Strain out the pulp through a fine mesh strainer or use a nut milk bag.
