We asked owner and grilling expert Zach Vosika where some of his favorite foods can be found in Jackson and it’s no wonder that The Blue Lion, known for its rack of lamb, and elk tenderloin, and Sweet Cheeks Meats, a speciality butcher shop, made the cut.

Ingredients
- Two racks of lamb
- Salt and pepper
- 2 tablespoons Traeger coffee rub
- 1 tablespoon coco powder
- Rub lamb down and let rest overnight in fridge
- For the Sauce:
- 12 cherry tomatoes, rough chopped
- 2 tablespoon Dijon mustard
- 2 teaspoons white wine vinegar
- 1 cup olive oil
- ½ cup of fresh mint, diced
Instructions
- Heat Traeger Grill to 450 F.
- Put lamb on the grill and cook to desired doneness (120 F for medium rare is preferred).
- For the sauce, mix all of the ingredients together and pour over cooked lamb.
