Summer may be receding in your rear view mirror, but we can still carry some summer flavors into fall with us. The pineapple salsa at Bin22 is salty, smoky and sweet. Bin22 served the salsa on grilled steak, but it would be a great topping for most meats. Don’t put the grill away just yet!
Ingredients
- 1/2 pineapple, cored and diced
- 2 roasted corn cobs, kernels removed from cob
- 2 tablespoons shallots, finely chopped
- 1 cucumber, peeled and diced
- 1/2 bunch cilantro, chopped
- 2 tablespoons honey
- 1/4 cup sherry vinegar
- Salt and freshly ground black pepper to taste
Instructions
- Toss ingredients to combine.
- Scoop with chips, crackers or serve on top of meats.
