The Aspens Market has the best chicken salad! It’s so fresh tasting and easily my favorite sandwich and salad topper in town. There are definitely a few secret ingredients I can’t pinpoint and I’d love to know how they do it! –Alexandra Alessandro, Jackson
Ingredients
- 1 pound chicken, cooked and cubed
- 2 tablespoons parsley, chopped
- 1/4 cup celery, diced
- 1/4 cup dried cranberries
- 1/2 cup mayonnaise
- 1 teaspoon apple cider vinegar
- Salt and pepper to taste
Instructions
- Combine all ingredients in a large bowl.
- Add salt and pepper to taste.
- Serve between bread or atop greens.
