One of the most delectably satisfying is the Mediterranean Bowl: walnut/almond/sunflower falafel crumble is served on a bed of romaine, hummus, cashew tzatziki, cucumber, tomato and kalamata olives drizzled with a lemon-herb vinaigrette.

Crispy Eggplant at Calico

Calico’s delectably crispy eggplant is served atop an herb and roasted red pepper aioli, locally-sourced arugula, marinated tomatoes and tangy, creamy goat cheese. It’s such a well-balanced and tasty plate, you might not even notice that it’s vegetarian.

The FAUX Bear at Figgie’s Deli

At one of Teton Valley’s favorite sandwich spots, there are plenty of tantalizing choices for the carnivore in your life. But if you’re looking for all the flavor and none of the meat? Order up the FAUX Bear (a vegan play on Figgie’s Deli staple the RoBear). It’s 460 multigrain bread piled high with tofu “bacon”, vegan smoked pepper aioli, roasted tomatoes, spicy arugula and sweet caramelized onions.

On a frigid winter evening, there’s little more satisfying that a steaming bowl of ramen. At Noodle Kitchen, vegans can easily get in on the (generally pork-based) action. This generous and flavorful bowl includes ramen noodles in a vegan broth with tofu, scallions, shiitake mushrooms and bean sprouts. It’s cozy, satisfying and oh-so-slurpable.

Sweet Corn Curry at Gather

Snow, rain, wind… no weather is too fierce. She’s a lover of peaches in any form, has a borderline addiction to arugula, and (strangely) has been known to drizzle soy sauce on pizza.
