Paulie’s to Open on Town Square

Some things will be familiar at the new restaurant, opening today, from Chef Paulie O’Connor, who has been operating the space within the Million Dollar Cowboy Steakhouse for several years.

Ever since the days when Old Yellowstone Garage was on Center Street, locals have fanned over the Italian food of Chef Paulie O’Connor. So much has changed in Jackson, including that E.Leaven now occupies that restaurant space, and Old Yellowstone Garage is now located in Teton Village, but one thing has stayed steady – the chef still has a following for his crave-able Italian cuisine.

So, O’Connor, who has been running the space within the Million Dollar Cowboy Bar, that was the Million Dollar Cowboy Steakhouse, has created a new concept and rebranded the restaurant. As of today, Paulie’s will be open and serving Italian cuisine alongside the steaks and sides you have come to know him for.

Think, “comfort, western and Italian,” he said. “We are not really trying to fill a void, but to offer some new staples.”

Many of the menu favorites from when it was primarily a steakhouse, like the John Wayne & Friends butcher cut of the night, will stay on the menu, but alongside them will be dishes like O’Connor’s famous lasagna, some focaccia-style flatbreads and pasta.

Along with the (hopefully temporary) changing of the COVID-19 times, he will be adding more things available for take out, like fresh pastas and sauces and dishes that can be finished at home. If you choose to dine-in, look for more Italian wines and amaro on the drink list.

Like in the past, there will be bar specials like a burger and a beer and a killer chicken parm sandwich.
