Not so fast! says the team from Jackson Hole Buffalo Meat Co. You can cook a steak directly from frozen! No need to wait for it to fully thaw. “It’s like a culinary magic trick that guarantees a tender, juicy steak with a stunningly pink interior and virtually no unsightly gray banding,” they said.

There are a few tips that can ensure maximum success when using this technique. First, freeze ’em right. Make sure that when you freeze steaks, they’re fully flat and stored in an airtight bag or container. Second, thicker cuts tend to work best with this method. Meat that is at least 1″ to 1 1/2″ thick is ideal. (Like this buffalo T-bone.)

You’ll be using both high heat and low heat to accomplish the perfect cook. Start by searing your meat on high heat for about 10-14 minutes. Flip and season the steak; as it begins to cook, it’s better able to hold the seasoning. Transfer the steak to a low, indirect heat to complete cooking to desired doneness — about 10-15 minutes more. Don’t forget to let it rest for 5 minutes after removing from the grill.
