South-of-the-Border Breakfast

Hatch Taqueria & Tequila is well known (and loved) for their authentic Mexican flavors artfully infused into both food and drinks. The breakfast-forward menu (though available through lunch, in case you’re getting a late start), brings rich flavor profiles to the table in creative ways.

Tuck into the chorizo breakfast burrito — bursting with scrambled eggs and chorizo, Oaxaca cheese, potatoes and hatch chili peppers, and topped with queso fundido and pico de gallo. If you’re in the mood for tacos (because really, who isn’t?), order up bacon and avocado tacos (with scrambled eggs, jalapeño bacon, melted pepper jack cheese and avocado on flour tortillas). Want a little more heat? Go for the spicy sausage tacos (grilled Bovine & Swine jalapeño cheddar sausage, scrambled eggs, and melted Oaxaca cheese on flour tortillas, served with fresh guac).

Another classic? Huevos rancheros, of course. Dig into fried eggs on a corn tortilla with refried beans, avocado, queso fresco and homemade green chile sauce.

A Sweet Start

We admit, a spicy breakfast isn’t everyone’s first choice. No judgment here! Hatch Taqueria & Tequila has tropical-inspired options that will please even the sweetest breakfast lover.

An instant favorite will be Hatch’s coconut banana French toast — made with brioche bread, banana curd, coconut, organic bananas and drizzled in maple syrup. Similarly irresistible? Banana huckleberry pancakes — gluten free house-made blue corn banana pancakes, served with huckleberry compote and maple syrup.

If you’re a purist when it comes to breakfast and simply can’t do without bacon and eggs, you’re still going to be quite pleased with the menu at Hatch. Dig into a hearty plate of two eggs any style you like, crisp applewood bacon, breakfast potatoes and multigrain toast. (There’s a kids’ menu version of this, too, should the youngest diners be interested.)

Central to Hatch’s excellence is their unsurpassed collection of tequilas. And depending on how long you were on the dance floor at The Cowboy Bar last night, a brunch beverage may be in order. We get it. We’ve been there, too. A bright, citrus-y accompaniment to any brunch meal, La Paloma is crafted with camarena blanco, french grapefruit, lime, agave nectar and soda. Think of it as a distant Mexican cousin of a mimosa.

There are no actual rules against a margarita at brunch, either. A perfect match for the banana huckleberry pancakes would be Hatch’s signature huckleberry margarita — a flawless blend of 100% blue agave reposado, fresh huckleberry puree, fresh-squeezed lime juice and agave nectar. Or go spicy! The chipotle mango margarita is mixed with 100% blue agave reposado, house made chipotle mango puree and fresh lime juice, served with a Tajin chili rim.
