While some powder days call for a get-it-quick mentality in the morning, other times, sitting down and avoiding the rush over a cappuccino and more leisurely breakfast, sounds better. And in a small-ish town, we love new options. So, thankfully, we now have a new one in Teton Village. RPK3 at Jackson Hole Mountain Resort is now offering breakfast every day from 8-10 a.m.
The menu is small, but sweet (yes, there are sweets). A curated selection of toast on local 460 Bread offers a nice mix to choose from. You can get breakfast burritos elsewhere; here, look for toast with smoked salmon and Boursin cheese, pickled onion and freshly shaved fennel or honey smoked bacon with a fried egg, spinach and Gruyere cheese. Of course, there is an avocado toast, but this version comes with hard-boiled eggs, braised kale and radish, too!
Want something on the sweeter side? Try the fresh-out-of-the-fryer apple fritters served with an apple cider glaze. And even the gluten-free can find something to be happy with: a satisfying dish with a fried egg, arugula and tomatoes, served with goat cheese and topped with basil.
