Gluten-free? Sky’s the Limit with Sky High Cuisine!

When Teri Davis transitioned to a gluten-free diet, she had no idea it would lead to creating her own line of baked goods: Sky High Cuisine. She found that when it came to high-quality and delicious baked goods in Jackson Hole, gluten-free options were somewhat lacking at the time.

“It began as more of a hobby,” she recalls; her previous career was in outdoor apparel design. She wanted to make her own transition into a gluten-free diet easier and more enjoyable. She remembers her young niece and nephew claiming that they simply didn’t like baked goods that were gluten-free. Teri heard this as something of a challenge.

Sky High Cuisine is Born

Nearly six years ago, Teri transitioned form a hobby baker to helming Sky High Cuisine and bringing exceptional gluten-free goods to Jackson Hole. Her delectable treats represent the confluence of healthy, satisfying and gluten-free.

She developed Sky High Cuisine as a way to not only ensure accessibility of tantalizing baked goods sans-gluten, but also in the most sustainable way possible.

“I’m not an early morning person, but I’m also committed to reducing food waste,” she explained. “We compost and recycle all we can.” Teri checks in with each of her clients at 10:30 a.m., finding out what they’ve still got and what they need more of. “Every day is a custom order. We make it right away and deliver that afternoon.”

This highly sustainable and responsive business model earned her “Wholesaler of the Year” in last year’s Best of Jackson Hole competition.

Today, you can find her tantalizing treats at Cowboy Coffee Co., Healthy Being Cafe and Juicery, Inversion Yoga, and at Teton Lunch Counter‘s new cafe location, opening next week!

A Mouthwatering Menu

Sky High Cuisine offers up baked goods that are so delicious, you won’t even notice the missing gluten. Beloved muffins include banana chocolate chip, blueberry lemon and ginger carrot. If you happen to be vegan as well, tuck into the vegan version of banana chocolate chip or a vegan banana pecan muffin.

Other excellent gluten-free breakfast bites include quiche — loaded with shredded potatoes, cheddar, broccoli and green onions — or French toast with maple syrup.

Sweet Treats

If anyone claims they don’t like a great cookie, they’re lying. Sky High Cuisine offers both cookies and brownies that will make anyone’s day.

Classic chocolate chip cookies are difficult to beat, but Davis’ also crafted irresistible peanut butter oat chocolate chip cookies and ever-so-cinnamony snickerdoodles. Need something even more chocolate-forward? Tuck into a rich vegan brownie.

Melissa Thomasma

In full rebellion against the unpredictable climate of the Rocky Mountains, you can find Melissa on her Teton Valley deck grilling any month of the year. Typically in flip flops. Snow, rain, wind… no weather is too fierce. She’s a lover of peaches in any form, has a borderline addiction to arugula, and (strangely) has been known to drizzle soy sauce on pizza. But even more than she loves her stand mixer and cast iron collection, she adores cooking for her husband and two kids. When this Jackson Hole native isn’t scurrying around her messy kitchen, she’s probably outside floating the river, hiking, camping, fishing, or, well… grilling.
