Tucked into the beautiful Teton Valley Resort on the western edge of Victor, the new Wanderlust Bistro marks the third culinary endeavor launched by the celebrated team behind Butter Cafe and StreetFood at the Stagecoach. Amelia Hatchard and her husband, Marcos Hernandez, are building on their local reputation for menus featuring internationally-inspired fare crafted from the freshest housemade ingredients.
“We are excited to be working with the resort team in serving both travelers and locals with a menu that continues to explore worldly and regional cuisines,” Hatchard said. The menu incorporates influences from Hatchard’s East Coast heritage, Hernandez’s Mexican background, and elements that reflect the couple’s deep connection to the Teton Valley area.
A relaxed, welcoming spot, Wanderlust Bistro exudes both a down-to-earth Western vibe and a worldly atmosphere — an ambiance epitomized by the handcrafted wooden world map adorning the wall. The inspired new eatery is offering breakfast and grab-and-go lunches every day, and dinner five nights a week.
Start your day with a cup of locally-roasted Alpine Air coffee and a freshly-baked cinnamon roll or scone, or tuck into something heartier: eggs, waffles, or a Hawaiian-inspired beef and rice plate. While you’re there, be sure to snag one of the delicious grab-and-go lunches. Thoughtfully packed with flavorful elements to fuel any mountain adventure, it’s an easy way to ensure that your midday eats are just as delectable as breakfast (no matter where you are when you’re ready to dig in).
“Menu favorites at Wanderlust Bistro change daily, but chicken ‘n waffles, blueberry pancakes, and Italian meatloaf with tomato jam continue to be very popular,” observed Hatchard. “We’ve taken care to include favorites from around the country including a Virginia breakfast biscuit (in honor of my parents), the New Yorker, a Midwest casserole dish, and a very popular Sante Fe burrito with handmade salsa that pleases diners at breakfast and dinner. Mahi Mahi tacos, as always, have their own fan club!”

Serving Breakfast from 6 a.m. – noon, grab-and-go lunches from noon – 5 p.m., and dinner from 5–9:30 p.m. (except Wednesdays and Thursday, when Wanderlust Bistro closes at 3 p.m.)
