Table on the Ranch

This summer Jackson Hole Farmer’s Market put on an unforgettable, seven course dinner.

The Jackson Hole Farmer’s Market brings together local farmers and ranchers who participated in the market each week all summer on the Town Square and during the winter with special events. The non-profit also put on one incredible seven course dinner this July called Table on the Ranch.

On July 27, they set out to celebrate all their wonderful vendors and customers in one unique evening.

The pasture-to-table meal was held at Grazing Star Ranch, located in Freedom, WY, south of Jackson. The event was an evening full of education, community, special wine pairings from Jackson Hole Winery and wagyu beef over a seven course meal. The event’s goal: to be as authentic as possible while highlighting every farmer/rancher who contributes to every farmer’s market throughout the year.

Over the course of the dinner, guests were educated on the operations of farms, what it takes to bring all this fresh food to the market, and their impact on the community. Grazing Star Ranch is an example of a family owned ranch specializing in full blood (100% not crossbred) wagyu beef. Nearly every dish featured this wagyu beef, produce from Harderlie Farms and local cheeses from Winter Winds Farms

Course one featured a chicken fried steak skewer with cajun aioli and a micro greek salad featuring four different ranches. The dishes were all curated by artisan chef Maggie Pallan, a local chef.

To wrap up the evening on a sweet note, a butterscotch pot de crème with white chocolate pearls and toasted meringue were served. Pot de creme is a French custard typically made from eggs, milk, and cream and in this dish all ingredients were sourced from local farms!

The Jackson Hole Farmers Market honored these incredible local farmers and ranchers in this dinner. The Table On The Ranch showcased their importance in this community. Not only did every guest leave with a fully belly, but also with new knowledge on the impact, the functionality and longevity of these farms and ranches.
