Sushi Savings at Sudachi

For one week more, you can experience some of Jackson’s finest sushi for half the price! Sudachi‘s offering two-for-one sosaku (specialty sashimi) dishes through Sunday – the last day before the restaurant closes for Jackson’s off-season.

Here’s what’s not to miss on the sosaku menu

Suzuki: striped bass, jalapeño ponzu, chive oil, Vertical Harvest microgreens and sea salt

Hama Nobu: yellowtail, truffle ponzu, jalapeño and calvisius caviar

Caprese: Skuna Bay salmon, house pesto, pickled tomato and garlic

Spicy Kanpachi: Thai chili ponzu, jalapeño, micro shiso, togarashi and sea salt

Tombo Tataki: Fijian albacore, grated ginger, crispy onions, ginger soy and sesame chilo oil

Tako Ceviche: lemon, tobiko, togarashi, ponzu, shiso and sea salt

While sushi chef Justus Stearns missed interacting with customers at the sushi bar this season, its also been a summer filled with delicious creativity.

“One the things that’s really cool about working here is that we do Omakase dinner – so it’s like tastings that are pretty free form. There’s a rough guideline that we follow, but we get to play around a lot and kind of do whatever we feel like doing.”

Part of what makes Sudachi’s dishes so incredible is the freshness of their fish. According to Stearns, their fish is shipped overnight from a purveyor in Japan. For the chef, his favorite Sosaku dish on the menu is the Suzuki.

“I would definitely go with the suzuki. I think it’s a really fresh, really light, clean tasting fish with kind of a bright citrusy preparation.”

Veggie Futomaki: assorted veggie sesame roll

Tempura Tuna Futomaki: spicy tuna tartare, fried tempura and wasabi roll

Tempura Ebi: shrimp tempura, cucumber sprouts and sweet soy

Temaki Hand Rolls: kappa, veggie, chef’s choice or salmon skin
