St. Patrick’s Day Crudités

With St. Patrick’s Day this Wednesday, I have been thinking about ways to incorporate green into the Holiday. While green cocktails and beer are as classic as Irish soda bread, corned beef, and colcannon on this holiday, I wanted a lighter, healthier option. I landed on a green crudités platter. Filled with colorful green veggies, this festive and flavorful platter will have your guests green with envy.  

I used cucumbers, green apples, broccoli, celery, snap peas, green olives, avocado, wasabi peas, green bean chips, and dips of pesto and tomatillo salsa. Raid the fridge and pantry and get creative with this fun twist on a classic vegetable tray! Cheers to our favorite green foods!
