Persephone is Back and Better Than Ever

For all the coffee fanatics who’ve been going through withdrawals without Persephone Bakery, the wait is over! On Monday, both the town and Westbank locations are reopen for the holidays. According to Persephone owner Ali Cohane, the Persephone in town took some extra time off for a little makeover.

“It’s nothing major — just layout of the counter for efficiency sake. We never imagined the volume we’d do, and were setup for a much slower pace.”

A few of the improvements include new cupboards, blue booths for indoor seating and an expanded kitchen to better serve the customer demand.

While the Westbank location did not undergo renovation, both Persephones open their doors Monday with holiday cheer. Whether you’re embracing the last few days of pumpkin spice latte or anticipating Christmas with a peppermint latte, they’re ready to fulfill all your seasonal cravings.

In addition to their incredibly delicious coffees and teas, you can’t forget your sweets! On the shelves, hot cocoa tins and gingerbread men await their new homes, perfect for snowy winter nights. And on display, the gorgeous drool-worthy display of freshly baked cakes, pastries and cookies make for the perfect holiday indulgence.

According to Cohane, her favorite holiday sweet is their panettone — a classic Italian sweet bread with hints of orange and packed with rum raisins. In addition to Cohane’s favorite, Persephone developed an entire holiday collection of sweets ranging from classic apple pie to their seasonal peach frangipane tart.
