One of the fastest growing food trends for summer treats is gourmet popsicles. There is a popular stand at the farmers market in Charleston selling salted watermelon and blueberry lemongrass, among other fun flavors, and a cutting-edge shop in Miami hyping what some are calling “the new cupcake,” or gourmet popsicles.
And now, we have them at our fingertips, literally, in Jackson Hole. Well, sort of.
“It is kind of like the off-the-menu burger at the Grill,” said Trio chef Adam Lassiter. “You have to know about them and ask for them. Really, we just use them to send as a special treat to our friends or good clients” he said. He makes lots of fun flavored ice cream at Trio and often uses that as the base for the popsicles.
Why not put them on the menu so all of us food-trending fanatics can enjoy this simple, but delicious treat, you ask? For Trio, it really comes down to freezer space (there isn’t much of it). That doesn’t stop Lassiter from experimenting with some of his favorite flavors.
The week I visited him in the kitchen, he had made Meyer lemon and thyme popsicles. He has also done a cucumber ice cream version, and he likes to present more esoteric varieties such as a corn icecreamsicle.
Try and become his friend, if you can. Maybe he will send you one on your next visit into Trio.
