Have no Fear, the Lobster Roll is Here…to Stay!

It’s official, the lobster roll, a New England staple, has made its way to the mountains, making a debut at food trucks and restaurants around town, and selling out before the menu even goes live. Jennifer Miazga, Owner of Miazga’s Restaurant and bar, has already sold over 200 lobster rolls in a single day at the restaurants “Ol’ School Lobstah Rolls” special happening every Friday, all summer long.

Originally from Upstate New York, Miazga opened her restaurant a year and a half ago hoping to share simple classics from her childhood with the Jackson community. Fond memories of frequenting the ocean and vacations to Cape Cod are what triggered her idea to offer her version of an east coast lobster roll.

The 1/4 pound lobster roll, served hot or cold, with Cape Cod chips and lemon, has already proven to be a big hit with locals and tourists alike. Last week Miazga’s Restaurant and Bar sold out of 35 pounds of the fresh Maine lobster with a pre-ordered waitlist. The $20 special runs every Friday 11:30 a.m. to 9 p.m., dine-in or take-out.

Want a lobster roll any and every day of the week? Freshies Lobster Co., is opening in a corner of Jackson Whole Grocer & Cafe this Thursday. Fresh Maine lobster rolls will be available everyday until at least the end of September, from 11 a.m. to 8 p.m.

Lorin and Ben Smaha, owners of Freshies Lobster Co. (with locations in Park City and Salt Lake City), have created a lobster roll demand with people waiting hours in line to taste the winner of a contest in Maine’s “Worlds Best Lobster Roll.” Originally from Maine and New Hampshire, the duo have been working on a Jackson location since doing three summers at a Jackson Hole Farmers Market event. They are testing the local response in the Whole Grocer space before possibly expanding into a store front that they have had their eyes on for several months now.

It’s [Jackson] a different little niche. There’s always been something about Jackson. Tourism in the summer, driving through Yellowstone, come to Jackson, eat a lobster roll, the irony of that is always intriguing to people as well.

The couple experimented a lot to discover their authentic winning flavor. Their summer menu will include lobster rolls, along with New England chowder, bisque, lobster lettuce cups with an Asian twist, and a New England crab rolls with Jonah crab from Canada. They will also provide catering, and grab-and-go food options including deconstructed lobster roll kits.

We started serving lobster rolls because you can’t get a lobster roll anywhere and that’s a sandwich that we are so familiar with.
