Four Seasons Jackson Hole Offers Pop-Up Omakase Experience

At the base of Jackson Hole Mountain Resort in Teton Village, the Four Seasons Resort and Residences Jackson Hole stands as a beacon of luxury and gastronomic delight. Always renowned for its opulent accommodations and world-class amenities, the resort recently added to its culinary offerings a pop-up omakase residency by New York City-based Taikun Sushi.

Omakase, a Japanese term meaning “I’ll leave it up to you,” embodies the trust between a diner and the chef. As such, guests of the pop-up dining experience will enjoy a weekly rotating chef’s choice menu that highlights the season’s most premium fish, perfectly paired with a handpicked selection of sake and wine. Diners should be prepared to take a journey through the courses, with each building on the depth and breadth of Japanese flavors.

Leading the experience is Chef Yoshikazu “Kazu” Ebina, a Tokyo native with 25 years of experience behind omakase counters at top sushi restaurants. He previously worked as an omakase chef at the Michelin-starred Den at Azabu, as well as at Taikun Sushi’s pop-ups in Aspen, Colorado and Miami (at the brand’s sister property, Four Seasons Hotel Miami). Here in Jackson Hole, the setting for this special tasting menu is an intimate, custom-built, eight-seat sushi counter in the Four Seasons’ Ascent Lounge.

Chef Ebina is not only a master culinary craftsman, his warmth and demeanor throughout the meal will encourage diners to ask questions as he introduces and describes each course. This interactive nature of the dining journey is a highlight. At the beginning of the experience, Ebina will inquire about the preferences and dietary restrictions of diners, customizing his slate of courses as-needed. From there, the experience unfolds like a symphony, each course a crescendo of flavors and textures carefully orchestrated to delight the senses. Upon its conclusion, diners will find that the experience highlights the harmony between simplicity and sophistication that defines Japanese culinary traditions.

Ebina sources the majority of the fish directly from Tokyo’s Toyosu Fish Market, ensuring only the freshest and finest selections for each seating. The menu features a selection of appetizers, which lead into several nigiri courses and a dessert course to finish. Signature dishes include Japanese A5 Wagyu topped with Hokkaido uni and Ossetra caviar, otoro with foie gras and Shima aji with yuzu kosho. To enhance the omakase experience, Taikun offers a sommelier-curated pairing of premium sake and wine.
