Thanksgiving and pies have a relationship like no other. What would be served for dessert if not for pies? If you aren’t baking your own pies for the holidays, it’s time to start thinking about where to get a few.
Food Shed Idaho in Victor, Idaho is a specially curated food shop with local, regional and other high-end offerings. Owner Cecily Costa recently started carrying homemade pies from Piedaho, a family-owned bakery in Hailey, Idaho. About two months ago, Costa stumbled upon the Piedaho Instagram account and started following the artfully crafted desserts. Originally, Costa had ambitions of baking her own pies for the store, but when she saw the Instagram feed from Piedaho, she didn’t think she could compete. “It’s remarkable what she produces in the kitchen she has,” said Costa. “Her pies are beautiful.”
Rebecca Bloom’s artisanal pie company started as a food blog then blossomed into a nationwide offering online. Things really opened up when Oprah featured the pies on her Favorite Things list of 2020. Jackson Whole Grocer sold Piedaho pies before the locally-owned grocery store was bought by Whole Foods.
When Costa was finally ready to expand her store in Victor and add another freezer, she drove to Hailey simply to meet Bloom in person. “It’s great because it gives me a product right from Idaho without having to compromise on quality,” Costa said. “Everything about Rebecca’s story made me want to sell them.”
Costa will have a rotating selection of four different kinds of pies, two crumble and two traditional pie crusts. The pies are frozen after being baked, picked up by a courier service in Hailey, and delivered to Food Shed Idaho the next day. The pies are sold for the same prices that are seen on Piedaho’s website, so ordering through Food Shed Idaho will save you in shipping costs.
The Food Shed is open daily from 2-6 p.m., and also by appointment. Costa will have all five of Piedaho’s Thanksgiving pies available for preorder, including a cranberry apple crumble and a mixed berry ginger. These pies make a wonderful gift and will be a welcome addition to anyone’s holiday spread. Don’t wait until the last minute to order your local homemade pie.
