Locals will be excited to hear that there’s a new pizza shop open in Wilson.
Wilsons Pizza is open in the cabin where Chippy’s Kitchen used to be, serving up deep dish pizza and Italian family-style take-home meals.
A soft opening this week is happening so the business can to ease into service and serve up food for locals when many other restaurants are taking a break. “We’re excited to be opening in the off season to serve the local community first,” said Roslyn Smithers, who co-owns the restaurant with her husband, Bill.

Smithers is a Jackson Hole native, and recently moved back to the valley from Salt Lake City with her husband. Looking for a reason to move back to the Tetons, they jumped at the chance when the Wilson space opened up in this spring. They spent the summer updating the interior of the building, with new handcrafted woodwork that contributes to the homey and cozy atmosphere.
In the winter, the cabin space will seat about 12 guests, with a focus on take-out orders. Over the summer they converted two windows to take-out windows, so customers can walk right up and order at the window. In the summer, outdoor seating will accommodate up to 60 guests – something to look forward to next year.
Wilsons will serve traditional thin crust pizza as well as Chicago-style deep dish pizza, something Smithers is especially excited to share with the community.
I have to restrain myself from eating a slice everyday when [Bill] is cooking. The crust is really buttery and delicious; I look forward to eating the crust as much as the whole slice. To my knowledge no one in town offers deep dish pizza so we’re excited to have something a little different.

Aside from pizza, the menu will include Chicago-style beef sandwiches, subs, salads, and rotating take-home family-style specials like chicken puttanesca and roasted red pepper vinegar pork chops.
“All the restaurants in Wilson offer such different food, so I don’t really feel like there’s much competition,” Smithers said. “One of my biggest mottos is community over competition, and I’m so happy to be a part of the community and joining other female entrepreneurs and business owners in the area. We’re in the business of good food but we’re also in the business of taking care of people through food and kindness. We’re proud to be building a business that takes care of our employees.”
