Caldera House Chef-in-Residence: Hisashi Udatsu

Enjoy the sushi creations of acclaimed Chef Hisashi Udatsu of Tokyo’s Udatsu Sushi, in the comfort of a Caldera House penthouse suite. Visiting all the way from Tokyo, Udatsu is known for his creative otsumami, traditional nigiri and rare Japanese sake pairings. He was trained in a Michelin star restaurant and is a favorite among high-profile artists, entrepreneurs and celebrities–and is sure to become a favorite of yours as well!udatsu

Just for this occasion, the highest quality fish is being imported from Tokyo’s Tsukiji Market. Indulge in wildly creative sushi rolls paired with a selection of rare sake. A “secret menu” of rare Japanese whiskeys and a ramen dish with fresh noodles and broth will be available as a la carte add-ons. Finally, Udatsu will have vintage kimonos from the Faruta Kimono collection on display and for sale.sushi

Enjoy this intimate, unique dining experience January 21-25 (lunch starts January 22). A 10-piece ($125) and 18-piece ($395) omakase experience is available for lunch from 12-2:30 p.m. during the residence, while the 18-course dinner omakase offers seatings at 6 or  9 p.m. ($395). Raised in the land of casseroles and deep fried cheese curds, Sam Simma left rural Wisconsin for the mountains of Wyoming in summer 2012. Her appetite for adventure is the only thing that rivals her passion for food. She has always used writing to document and critique her travel and dining experiences. Her warmest memories among family and friends have been associated with the food that was at the center of the occasion. From staging cooking shows with siblings to perfecting turtle brownies with her dad, today Sam enjoys connecting people over food by hosting cookie decorating parties, wine pairing nights, and Midwest-inspired potlucks. A dessert fanatic, she has come to impress friends and family with key lime pies, Oreo bon bons, and Snickers ice cream cakes that are far simpler than they could ever imagine. Shhh! Don’t tell.
