Summer is knocking on our doors and we couldn’t be happier to see these long sunny days roll in. What better way to celebrate than a round of summer cocktails on the deck?
Aside from a lineup of summery cocktails, Spur is wrapping up some major renovations, getting ready to open a brand-new patio in Teton Village. The new deck (which will also have fire pits for winter hangouts) is about to become the ultimate place to soak up some aprés sun and sip on fresh summer refreshments, with glass accordion doors that will open up straight from the dining room.
We pulled up a seat at Spur’s bar to chat with bartender, Julian LaCourse, about the creative new summer cocktail menu he designed alongside members of his team.
The key to creating the perfect summer cocktail? “Balanced and approachable,” LaCourse says. “Not too sweet, tart, or boozy. Summer cocktails are all about finding a balance.”
With a brand new deck and a brand new lineup of cocktails on the docket, it’s shaping up to be a big summer at the Spur. Here are a few must-try summer drinks.
Elderflower Rosé Fizz
St. Germain Elderflower Liqueur, Aperol, rosé lemonade, egg white, and lemon juice topped with an edible flower make for an ultra-refreshing fizz. A light and refreshing drink, this one truly embodies summer, the perfect way to kick off an evening out. “It’s springy and approachable, a total killer once the deck is open,” says LaCourse. “Not as sweet as something like a piña colada, but it goes down easy.”

Geothermal
Mezcal lovers, this one’s for you! With Del Maguey Vida Mezcal, Cointreau, Lillet Blanc, cinnamon, simple syrup, lemon juice, and chili bitters shaken and strained over ice and black lava salt on the rim, the Geothermal is a unique spin on a mezcal margarita— a smoky flavor and subtle spice that makes for a complex cocktail, less sweet than many summer bevies.

Pain Killer
Bacardi and pineapple juice? Say no more. Aptly named, this one has the capacity soothe any sorrows, transporting us to sunnier places no matter the weather. Bacardi 8-Year Rare Gold Rum, pineapple juice, orange juice, Coco Lopez, and nutmeg make for a tropical, sweet and summery drink that’s impossible to resist. “Pineapple juice is one of my favorite ingredients to add to a drink, and I just love this cocktail,” says LaCourse. “The Pain Killer embodies everything that sitting in the sun drinking a cocktail should be.”
