Food News: Pinky G’s to Open Third Location in Victor

Pinky G’s Pizzeria in Jackson has been a community staple for years. A quick, late-night and delivery pizza joint is necessary in any town. And in December, the doors will open at Pinky’s new location in Victor, Idaho.

Owner Tom Fay took over the location of Grumpy’s Goat Shack and has a new vision for the small building. The building will house a kitchen inside where they will offer take-out this winter, opening daily at 4 p.m. He hopes to get landscaping done with some firepits to keep patrons warm while they wait for their pizza. In the summer months, customers will be able to order at the window and enjoy outdoor dining on the patio.

Pinky G’s opened in Jackson in 2011 and has maintained a reputation as a local hangout spot with delicious hand-tossed pizza and quick service. They’ve won multiple awards for Best Pizza in Jackson Hole, and they have been featured on Diners, Drive-ins, and Dives. Fay opened a second location in December of 2019 in Big Sky, Mont.

The Victor menu will consist of pizzas and salads, and Fay said they might experiment with the idea of baked wings, since they won’t have any fryers in the kitchen. Beer and wine will be available, and sloshies will be offered on the menu next summer.

A food delivery service will be a welcome addition to Victor, which has grown drastically as a standalone community. Fay also plans to expand business hours to lunch and dinner starting next summer.

With the third location opening, Fay will have a nice corner of the market in not only three towns, but three different states. The Teton Valley project has been in the works for a few months, but inside construction began at the beginning of October. The pizza spot is on track to open the first week of December.
