Absaroka: Jackson Hole Still Works' Newest Spirit

Jackson Hole Still Works started their foray into spirit production with their Still Works Vodka. That first product was followed by their Great Grey Gin, and both have made a name for themselves as being high-quality spirits that just happen to be local. But as of last month, they’ve added a third product to their inventory: the Absaroka Double Cask Gin 49, and it has exceeded all possible expectations.

This final product is more than two years in the making. The earthy, smooth tone of this gin will speak to both gin and whiskey drinkers. Let’s be clear: this isn’t their Great Grey Gin in barrels. Rather, the Still Works team played around with different botanicals before finally deciding on the liquid that would rest in whiskey barrels for fourteen months. At that stage, having achieved a desirable level of spice, they pulled all the gin from the barrels and combined it, before allowing it to rest. Not quite happy with the vanilla flavors, the gin was rolled into brand new whiskey barrels, where it sat for an additional five months.absaroka

This second sit in barrels brought out the vanillas and caramels in the spirit, with just a hint of anise for good measure. For Still Works’ first venture into brown spirits, this one has a depth of flavor that will entice the palates of many. Both its makers and imbibers will agree: it surpasses expectations. Enjoy it on the rocks, with a lemon twist, or try it in one of your favorite gin or whiskey drinks. From a Negroni to a Manhatten, only the Absaroka can toe the line of complex flavors amidst both gin and whiskey.

Since Still Works’ gin and vodka bottles are adorned with local art, it only makes sense that the label for this newest product was designed by graphic artist Jenny Graham. The label’s markings are a contemporary portrayal of a bandana pattern. Meanwhile, the name itself is a nod to the 49th state that never was: Absaroka. Containing parts of Montana, South Dakota and Wyoming, this state would have been a tourism mecca containing Grand Teton National Park, Yellowstone National Park and Mount Rushmore, with Sheridan, Wyoming being the proposed capital. Although this territory failed to become a state, the Absaroka Gin is born as a tribute to its history and a reflection of the passion Jackson Hole Still Works has for the state of Wyoming. absaroka

Curious? Get it now before it’s gone. 600 cases were made, and once it’s gone, you’ll have to wait at least one year for another chance at a taste. Find it in most local bars and liquor stores. In the meantime, we’re excited to see what Still Works develops next. Cheers!

Her appetite for adventure is the only thing that rivals her passion for food. She has always used writing to document and critique her travel and dining experiences. Her warmest memories among family and friends have been associated with the food that was at the center of the occasion. From staging cooking shows with siblings to perfecting turtle brownies with her dad, today Sam enjoys connecting people over food by hosting cookie decorating parties, wine pairing nights, and Midwest-inspired potlucks. A dessert fanatic, she has come to impress friends and family with key lime pies, Oreo bon bons, and Snickers ice cream cakes that are far simpler than they could ever imagine. Shhh! Don’t tell.
