In the Kitchen with White Buffalo Club’s Dwayne Gulley

The White Buffalo Club has long been known as a classic steakhouse. Since May, the new Executive Chef Dwayne Gulley has stepped into their kitchen.

Gulley is originally from Montgomery AL or Eastern Tennessee, depending which of his parents you ask. He has always had a love for cooking and his first job was at a steakhouse, which only foreshadowed where in life he would end up.

Between now and then, Gulley has lived and worked in seventeen different states, four countries and dozens of restaurants. He has traveled the world, both for pleasure and due to his time in the United States Army. After leaving the army, Gulley spent a long time as the executive chef for football stadiums, Yellowstone and Montana State University before he moved to Jackson.

In 2019, Gulley accepted a job at The Wort Hotel as the executive chef for the Silver Dollar Bar and Grill. This spring, Gulley moved to The White Buffalo Club and he has been eager to implement new changes since. He is focused on making the club special.

This winter Gulley has plans to start experimenting on a new ramen dish featuring A5 beef and jumbo prawns. The winter menu will lean into a Japanese style of cooking, which is new for The White Buffalo Club. It will feature three to four elaborate ramen dishes with skills he learned while living in Japan.

When asked what inspires Gulley to keep cooking, he stated that it is about making others happy. Everyone who dines at The White Buffalo Club should leave with a good experience and a full belly.

At The White Buffalo Club everything is made in house when possible, something that Gulley prides himself on. For him, it is all about the preparation of a dish starting from scratch whenever possible. It is not only about the dish, but every ingredient and the preparation going into it that sets Gulley’s work apart.

Though Gulley works at a steakhouse, his favorite style of food is southern comfort, stemming from his childhood in Alabama. On his days off of work you can find him in the woods camping, fishing or enjoying his favorite things: The Raiders, bourbon and cigars. 

Gulley has lived an exceptional worldwide life of cuisine and has brought that to the table at the White Buffalo Club. Stop in while you can everyday from 5 p.m. to close or visit their website.
