Even prior to their public launch next week, Midnight Pie and Co. has been capturing our attention with their mouthwatering Instagram feed. If you haven’t already taken a peek: these pie pictures look almost too pretty to eat (emphasis on almost).
Erika Dahlby first dove into the world of baking with crisps, crumbles and cookies. But when she tackled pie dough, it didn’t turn out so well. Not one to back down from a challenge, she became dedicated to perfecting the process. Similarly, Dahlby has since enjoyed experimenting with unique pie fillings and combinations, and refining them, sometimes for months. Think lemon honey lavender, coconut matcha, blackberry balsamic and carrot cake pie. Intrigued yet? 
Alongside her boyfriend, Zach Nelson, Dahlby has transformed her hobby into Midnight Pie and Co., inspired by the lengthy process of making a pie completely from scratch. Starting her pies in the afternoon, after her day job, Dahlby found that her pies were usually a midnight snack, and a tasty one at that. Both Nelson and Dahlby prioritize locally-sourced, seasonal ingredients in their pies, which is why the flavors are constantly evolving. These pies come to life from the labors of local purveyors, with lard and eggs from Sweet Cheeks Meats, bitters from Bear Root Bitters, lavender from Jackpine Lavender, corn meal from JH Stillworks and more.
Midnight Pie and Co. will begin sales of their pies at the Jackson Hole Farmers Market, Saturday mornings on the Town Square, starting June 22. These sales are made possible by the Wyoming Food Freedom Act, which allows and enables the sale and consumption of homemade foods. Expect whole pies, pie by the slice and delightful little hand pies. They will rotate flavors during the market season, with 3-4 varieties at each market. Finally, what pairs well with a Saturday morning slice of pie? Coffee. That’s right, the Midnight Pie and Co. team is as passionate about quality coffee as they are about unique pie flavors. Both drip coffee and cold brew will be available at the Midnight Pie and Co. market booth.
Get your first taste of Midnight Pie and Co.’s pies at their public launch party during Sweet Cheeks Meats’ Thursday happy hour next week. From 4-6 p.m. on June 13, Sweet Cheeks will host their weekly happy hour, this time with the addition of free pie samples from Midnight Pie and Co. These happy hour events at Sweet Cheeks are BYOB. Prepare to be dazzled by the beauty and flavors of the Midnight Pie and Co. pies.
