Petite Cakes Sweetens Jackson, and a Giveaway

How many times have you said “Jackson needs a cupcake shop?”


I mean, the rest of the country discovered cupcakes years ago. And yes, we have a few bakers that make amazing cupcakes. But we don’t have anyone who focuses just on cupcakes. Until now.

Meet Petite Cakes. Owner Mandy Rush (yes, that lovable Mandy who is a nail technician at Frost) launched her business after a friend tried her cupcakes and suggested she start a business.

“I thought that Jackson needed a company that just does cupcakes,” Rush said.

And she has the background to make a really good cupcake. Her mother is a wedding cake maker/decorator in Evanston, where Rush grew up.


“I grew up with her always making cakes,” Rush said. “She let us play with the icing, and I would help her with different things.”

Suffice it to say that the love of baking took hold early. After a few cake decorating classes and armed with some of her mother’s and grandmother’s cake recipes (all developed in Wyoming and adjusted for altitude) and some she developed on her own, Rush dove in to Petite Cakes.

Flavors include the classics (vanilla, chocolate, red velvet, lemon, strawberry and carrot cake) and some of the more exotic (coconut, salted caramel, chocolate peanut butter, orange rosemary, key lime and s’mores).

She has already done large trunk shows for Belle Cose and small orders for dinner parties. She only requires a one-dozen minimum for large cupcakes ($3 each) and two dozen for small cupcakes ($1.50 each). She doesn’t have a storefront and is baking from home.
