Since my cousin moved to Denver over a year ago, I now have had a good excuse to visit. As a food lover, I can attest, this town is full of great meals. I really haven’t had a bad or boring dining experience ever in Denver. It almost makes me want to move there too! He seems to be loving it a lot (who could blame him with all this great food), he was so happy to move and is really enjoying himself there. I don’t know how many neighborhoods he looked at, Cory-Merrill Denver was one that stood out to him during his research but he had to go for one that was closer to his job! Doesn’t matter to me though because no matter where he is in Denver, there is this delicious food.

Starting with breakfast at Snooze, which is a must, you can easily eat your way through the city with great meals all day. On every visit, I go to Rioja, which is consistently amazing. Last time I had lunch there, and it was just as exciting as dinner. Jackson residents who loved Terrior should check out twelverestaurant. Chef Jeff Osaka, who ran the kitchens at both Terrior and Koshu, when it first opened, creates a new menu every month that won’t disappoint you.

But on my most recent trip, I made a stop at Edge Restaurant in the Four Seasons. My mom and I had a spa date there (also worth going to if you can) so decided to have dinner in the hotel after. We were blown away by how good it was. Executive Chef Simon Purvis is a master with a steakhouse menu. He worked at the Four Seasons in Jackson for a while and moved to Denver when the property opened a couple of years ago.

Even though I don’t eat much meat, I love a good steakhouse. Edge is an exceptional steakhouse. I had a beautiful piece of tuna, with an aggressive and delicious fresh jalapeño sauce, and my mom had what she swears is the best steak of her life. Our appetizers were also unique, beautiful and delicious: a crab cake with watermelon, pineapple, radish, ginger and a Sriracha aioli and a beet and burrata salad with pistachios and a tarragon vinaigrette.

The side dishes all sounded so good it was difficult to pick, but we enjoyed crispy Brussels sprouts, beer-glazed carrots and hand-cut truffle fries. Believe it or not, we saved room for dessert. Yet again, amazing.

We left, surprisingly, not totally stuffed. The portions were all appropriate, and nothing was overwhelmingly rich, like it can be at a steakhouse. I would love to go back here for dinner again and suggest you do too on your next trip to Denver!

My mom and I couldn’t decide which was better, this warm, sticky toffee pudding or the restaurant’s version of a cronut with pumpkin spices.
I have breakfast at Snooze every time I am in Denver. It is always delicious.
