I love a good food truck expedition. There is something so exciting about not having to commit to a meal before you see what is out there and decide what you are in the mood for. Furthermore, at a food truck gathering, there is something almost anyone would want to eat, and generally portions are smaller so you can try a few different things.
On a recent trip to Salt Lake City, I tracked down a food truck event I had heard about through new Dishing contributor Jenn Rice, who just moved to Jackson Hole from Salt Lake City. The event happens downtown from 11 a.m to 2 p.m. every Thursday and offers a variety of options. There were sliders, Asian food, tacos, cupcakes and more.
Photographer Jay Nel-McIntosh and I tried food from three different vendors, and our favorite by far didn’t even have a truck but instead had a cart. It was Mexican food, and they basically made a taco with melted cheese that you stuffed with toppings from a cooler.
