Coming Soon: Restaurant Owners Opening Butchery


Like the charcuterie and house-cured meats Local and Trio serve? Soon you will be able to serve them at your own dinner party. The owners are moving into the Deloney space previously occupied by Backcountry Delicatessen. 

Will Bradof, one of the owners, said the location of the space, just steps away from Local’s back door, made the move a natural fit.

“The proximity and the fact that it became available made it a no-brainer,” he said.

The additional room will not only allow them to offer a retail space, but also to provide more space to accommodate the growing businesses’ catering services.

The yet-to-be named butchery and deli business will open sometime this summer. Bradof said they plan to offer a rotating menu of items and takeout to fill a gourmet niche currently missing in town. 

There is no place in town where you can buy specialty items such as fresh prosciutto, he said. In addition to the meats, the deli will sell pre-made sandwiches, local steaks from Lockhart Cattle Co., and other specialty items such as cured olives and fois gras.

“People can swing by and grab stuff for appetizers or dinner,” Bradof said. The menu will fluctuate frequently, and everything sold will be high quality items. “Think of an old-world style shop,” he said. “We won’t have any processed meats.”
