Gather’s Vegan Panisse Recipe


  • 2/3 cup masa corn flour
  • 3 1/3 cups Cici bean powder (garbanzo flour)
  • 2/3 cup garlic, minced
  • 2/3 cup shallot, minced
  • 3/4 cup jalapeno, finely shaved
  • 3/4 cup plus 2 tablespoons Crisco
  • 3/4 cup plus 2 tablespoons olive
  • 4 quarts coconut milk
  • 1/4 cup salt


  • Heat oven to 350 F.
  • Toast the masa and cici bean flour about 7 minutes, or until golden.
  • In a large pot, sauté the garlic, shallot and jalapeno in the Crisco until translucent.
  • Add the olive oil and coconut milk, bring to a simmer.
  • Slowly stir in the toasted flours and add the salt, stirring constantly until fully incorporated.
  • A thick paste should form that does not stick to the pot.
  • Spread out onto greased pan to a 1-inch thickness.
  • Let cool for 1 1/2 hours.
  • Cut to desired shape.
  • Sear in a nonstick pan on medium-high heat.
